Vegetarian Refried Beans for Tacos

  • 1 tablespoon canola oil, or another high-heat oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeno very finely diced
  • 5-7 dashes of tobasco. If you like the smoky flavor in beans then use the chipotle flavored tobasco.
  • 2 tbsp of taco seasoning
  • 2 (14 ounce) cans pinto beans, drained and rinsed and mashed
  • salt if needed at the end after tasting the beans.
  • taco shells
  • finely chopped lettuce, onion and tomato.
  • sour cream
  • cheese

 

 

Heat oil in a medium skillet medium heat.When the oil is hot, add the onion. Sauté until soft and translucent, about 3 minutes.Add the garlic and the jalapeno and sauté for about 1 minute more, until very soft.
Stir in the taco seasoning, tobasco sauce and cook for another minute.
Now add the mashed beans and 1/2 cup of water. Mix the beans and stir until everything combines.
Add salt if needed.
Fill in the taco shells and top with sour cream, lettuce onion and tomato.
