Quinoa-Avocado Wrap with Orange Glazed Tofu

2 cups of cooked quinoa seasoned with salt and pepper
2 ripe avocados sliced
2 tomatoes thinly sliced
1 medium sized onion thinly sliced
1 medium cucumber, peeled and thinly sliced
1 carrot, peeled and shredded
6 large whole wheat tortillas

For the tofu marinade:
1 cup orange juice
1/2 cup lemon juice
1/4 cup maple syrup
1/4 cup chopped fresh cilantro
1tsp red crushed pepper
1tsp olive oil
1/2tsp salt
1-14 ounces of extra firm tofu cut into 1/4 inch slices

Mix all ingredients of the marinade and marinade the tofu for atleast 2-3 hours or overnight.
Bake the tofu in a preheated oven at 375deg F for 18-20 minutes.
Warm the tortilla. Place about 1/4 cup of cooked quinoa in the center of the tortilla. Now place the the thinly sliced avocados,tomatoes,onion,cucumber,carrots and the tofu pieces too.
Fold in both sides of the wrap and roll it tightly from the bottom to the top. Slice each wrap into half and serve.
