1 cauliflower, cut into medium sized florets

3 medium sized potatoes diced into large cubes

1 green bell pepper thinly sliced

2 medium sized onions thinly sliced

2 tomatoes finely chopped

3-4 cloves of garlic finely chopped

6 tbsp of vegetable/canola oil

2tsp turmeric powder

3 tsp red chilli powder

4 tsp of roasted and crushed coriander powder

a dash of asafoetida

2 tbsp of kasoori methi

salt to taste

 

Preheat oven to 425 deg F.

Toss the cauliflower florets and the potatoes with 1 tbsp of oil and season it with salt and roast them on separate trays (cauliflower roasts faster and the potatoes take a little longer to roast). Roast until you see them browning on the outside.

In a wok heat about 3 tbsp of oil. To it add a dash of asafoetida then to it add the garlic,onions,peppers and let it cook for 3-5 minutes. Now add the tomatoes and cook for another 2-3 minutes.Now add all the spices except for the kasoori methi. Cook for another 2 minutes.

Now add the roasted cauliflower and the potatoes and mix well so that all the cauliflower and the potatoes have a coating of the spices. Now add the kasoori methi.

Place a lid on the wok and cook on low flame for another 10 minutes with occasional stirring it.

Serve hot with roti n daal.
